Hoteling - QR code to book a workstation
Imagine the following process:
1- Employee scan QR of a workstation
2- He is able to see if the workstation is available
3- If yes, user can book the workstation

That is correct, this functionality is available in Workplace and allows you to Book a workspace. The full documentation can be found here:
Customers have reported difficulty using QR codes in SSO environments. In this case, it is currently only recommended when Guest Mode is enabled, which allows users to open Workplace without logging in.

Additionally if the user scans at the room can the user also be prompted to "Check In" if it is required and available?
